From time immemorial, wine and cheese have simply belonged together. Did you know that eating cheese while drinking wine affects the taste and choice of wine? In the French city of Dijon, they found that the consumption of cheeses influenced the description of taste for all types of wine, and in most cases it affected their preference. However, none of the cheeses caused the wine to lose its taste. It has been found that cheeses in red wines reduce the duration of the dominance of bitterness and increase its aromaticity. In the case of sweet white wine, the duration of the dominance of sweetness did not change even after the consumption of the cheese, but in the case of white dry wine, the cheese had a great influence mainly on the aroma.
